Protein Pancakes for breakfast this morning which went down a real treat, Mason gobbled down most of them but I managed to get a few before they were all gone. And let’s be real, it’s not truly a great Sunday morning without pancakes!Print
These pancakes are super healthy, full of protein and fibre and will kick start your day the right way! They’re full of organic oats, banana and of course protein powder – which you don’t have to use if you don’t want to.
- 2 eggs
- 1 cup of organic oats
- 1/4 cup coconut milk
- 2 small bananas
- 1 scoop protein powder
- These are going to be the shortest instructions ever… Literally, put all your ingredients in the blender and give a quick whizz (If they come out too runny add more oats, or to thick more coconut milk).
- Heat up a pan on the stove top to medium heat, add a small dash of oil or butter. You can either go with big American style pancakes or small pikelets.
You can either go for maple syrup (I always try and find 100% Canadian, aka the good stuff), chop us some fruit, or heat up some frozen berries. All options work out great with the latter two having a little less overall sugar.
